Falafel
Ingredients:
3 cups soaked garbanzo beans (chickpea)
1 cup organic parsley or spinach
2 medium size onions
2 cloves garlic
2 green chilies
1 tbsp lemon juice
1 tsp coriander powder
1 tsp cumin powder
1/8 tsp baking powder
Salt to taste
Coconut oil for deep frying
Method:
Pulse all above ingredient except lemon juice and baking powder in food processor until mostly smooth, but still chunky.
Transfer the mixture into the bowl and add baking powder and lemon juice and combine well.
Shape into desired size patty and place on platter.
Deep fry all patties in coconut oil on medium flame until golden brown.
