Quinoa and Avocado Salad


  • 1/2 cup uncooked organic red quinoa

  • 1/2 cup uncooked organic white quinoa

  • 1/2 cup diced red onion

  • 1/2 cup diced cucumber

  • 1/2 cup cooked kidney bean/ Black bean

  • 1 cup chopped tomato

  • 1 diced green capsicum

  • 2 chopped avocado

For Dressing:

  • 1/4 cup extra-virgin olive oil

  • 2 table spoon lemon juice

  • 1 tea spoon Apple cider vinegar

  • 1/2 tea spoon Himalayan rock salt

  • pinch of pepper


  • Mix red and white quinoa and rinse them well using fine sieve and then drain. Put the rinsed quinoa into a saucepan and add 2 cups of water and bring to the boil. As soon as it start to boil, turn the heat down to a simmer for 15-20 minutes. When cooked fluff with fork and put a side to cool down.

  • Mean while to prepare dressing, whisk together olive oil, lemon juice, apple cider vinegar, salt and pepper in small bowl.

  • In large bowl, combine cooked quinoa, cooked kidney bean, red onion, cucumber, tomato, green capsicum and avocado. Mix well with dressing.
